Around the beginning of the 80s, those adorable Chia Pets starting appearing under everyone’s Christmas tree, making the ideal (gag) gift. I don’t think anyone knew (around here anyway) just how nutritious and beneficial chia seeds could be.
Noted for their energy-giving properties, chia seeds have been used in South America for centuries. They are packed full of Omega-3 and ALA. They are gluten-free, rich in antioxidants and easier to digest than flax seeds. When soaked in water, they become like jelly and can be used to thicken sauces, desserts and gravies.
They’ve seen a re-emergence recently due to the fact that they are an effective appetite suppressant. Chia seeds soak up to 9 times their weight in water and leave you feeling fuller for longer. You can sprout them, soak them or eat them raw or try them out in this delicious, easy-to-make dessert.
Ingredients
• 1 tbsp ground chia seed fiber
• 8 oz water
• 1 scoop whey protein isolate powder (I recommend strawberry)
Preparation
Combine chia seeds with the water until a jelly is formed. Add the protein powder and whisk. Refrigerate for half an hour. Add some of your favourite berries, a dollop of vanilla yogurt and garnish with a sprig of mint. Divine!
